We Produce Specialty Coffee at Origin
Production at Quimiapan is not outsourced, improvised, or handed off to third parties. Every step takes place at origin—within our own estates, under our own supervision, using infrastructure we’ve built to ensure consistency and control.
The estates are located in the highlands of Coatepec, Veracruz, at 1,200 meters above sea level, where stable temperatures, rich volcanic soil, and natural shade create an ideal environment for coffee cultivation. These aren’t rented plots or shared facilities—they’re managed agricultural systems designed around long-term quality and lot integrity.
Each varietal we grow—Geisha, Geisha-Marsellesa, Obata, and Anacafé 14—is selected based on how it performs in this terroir, not for marketing appeal. Every plant is grown under shade, with controlled spacing, airflow, and pruning cycles that reduce disease risk and maximize ripening consistency.
When harvest begins, precision becomes the priority. Only ripe cherries are picked, based on color and internal sugar content. The team uses handheld refractometers to verify Brix levels in the field, ensuring uniform fermentation later in the process. Selective picking is non-negotiable—each lot may be harvested in multiple passes to maintain that standard.
Immediately after harvest, cherries are processed on-site. We operate our own wet and dry mills, allowing us to maintain full control over pulping, fermentation, drying, sorting, and storage. No coffee leaves the estate until it’s been evaluated and stabilized.

We Manage a Fully Integrated Estate System
Quimiapan is not a single farm—it’s a strategically structured estate model, built to ensure control, scalability, and stability across seasons and volumes. Each estate under our management serves a specific purpose and is selected for its altitude, microclimate, and potential to contribute to a consistent supply of specialty coffee.
Some estates are designed for high-yield, stable lots, while others are focused on micro-lot experimentation, fermentation research, and processing trials. This intentional diversification allows us to isolate variables, test new techniques, and scale successful results into broader production without compromising quality.
All post-harvest processing—wet milling, drying, dry milling, storage, and sorting—is centralized at Hacienda Quimiapan. This means that regardless of which estate a lot comes from, it enters the same infrastructure, follows the same standards, and receives the same level of oversight. No stage is outsourced or handled blindly. Each lot is tracked, recorded, and cupped in-house.
This system allows us to offer a wide range of processes, profiles, and volumes, while preserving full traceability and long-term consistency. For roasters and importers, it eliminates risk and guesswork. For our team, it means accountability at every stage of production.

We Host and Collaborate with Roasters
The estates are not just production sites—they are open, working environments where roasters are invited to observe, engage, and contribute. At Quimiapan, transparency is operational. Roasters can walk the fields, participate in cupping, review processing techniques, and even design their own lots alongside our team.
For those looking for deeper involvement, custom batch development is available. Clients can select specific varietals, outline fermentation preferences, and follow drying timelines with direct input from our processing team. Some visit during harvest. Others send instructions remotely. Either way, they receive a coffee that reflects not only our standards, but their own vision.
