Varietals
Geisha (Gesha)
Geisha (Gesha)
Originally collected in Ethiopia’s Gesha region, this varietal is celebrated for its jasmine aroma, bergamot-like brightness, and tea-like mouthfeel. At Quimiapan, we grow Geisha at 1,200 meters (3,937 feet) above sea level under shade and harvest it manually using refractometers to ensure optimal ripeness.
Spacing & Yield:
Plant spacing: 1.25 × 1.50 meters (4.10 × 4.92 feet)
Density: ~5,333 plants/hectare (~2,158 plants/acre)
Average yield: 5 kg of cherry per plant (11 lbs)
Total yield: ~26,665 kg/hectare (~23,905 lbs/ha or 10,844 lbs/acre)
Ideal Processes:
Washed, Red Honey, and Black Honey—emphasizing its high florality and layered complexity.
Marsellesa-Geisha (Gesha)
Marsellesa-Geisha
A hybrid between Marsellesa and Geisha, combining floral complexity with disease resistance. Excellent for producers and roasters seeking character with resilience.

Density: ~6,400 plants/hectare (~2,590 plants/acre)
Total yield: ~32,000 kg/hectare (~28,220 lbs/ha or 12,800 lbs/acre)

Elegant floral notes, red fruits, and a balanced body—great in Honey and Natural processes.
Obata
Obata
Known for rust resistance, high productivity, and smooth flavor. At Quimiapan, Obata thrives in shaded environments, producing consistently clean and structured cups.

Density: ~6,944 plants/hectare (~2,811 plants/acre)

Chocolate, almond, and citrus peel. Works well in espresso or as a base for blends.
Anacafé 14
Anacafé 14
A hybrid from Guatemala, Anacafé 14 produces sweet, fruit-forward cups with excellent structure and yield.

Washed

Washed Process
Washed Fully depulped and fermented, then washed and shade-dried to a stable 10.5% moisture. This classic method allows varietal and terroir expression to shine through. Cup Style: Crisp, clean, transparent. Best for Geisha and Obata to highlight acidity and complexity.
Lavado

Honey

Honey Process — Visual Guide (Left to Right)
1. Red Honey – Higher mucilage content, resulting in a syrupy body, intense sweetness, and notes of ripe red fruit. Carefully dried under shade to avoid overfermentation.
2. Black Honey – Maximum mucilage, slow-dried with minimal airflow, producing bold, winey cups with deep fruit and spice complexity. The most intense of all honey styles.
3. Green Honey – Medium mucilage with a quicker, more ventilated drying curve. Tends to be brighter and fruit-forward, with crisp acidity and tropical notes.
4. Yellow (Regular) Honey – Balanced mucilage, clean drying process. Produces a sweet, rounded cup with stone fruit and floral tones. Often used for consistency and clarity.
5. White Honey – Minimal mucilage, the cleanest and lightest version. Offers delicate florals, soft sweetness, and a tea-like body, closest to washed cup characteristics.

A rare profile with vibrant notes of kiwi, papaya, strawberry milk, and dark chocolate — the result of a remarkable drying transformation.

Natural Process
Natural Whole cherries are sun-dried on raised beds using our 3-stage model to control temperature, airflow, and moisture loss. This prevents rehydration and creates clean, fruit-driven cups. Cup Style: Berry, tropical fruit, chocolate. Bold, expressive, and full-bodied—especially with Marsellesa-Geisha and Anacafé 14. Full-bodied and fruit-forward, our natural coffee brings vibrant notes of ripe berries and dark chocolate, sun-dried in the cherry for bold complexity and sweetness.

Our natural process coffee is dried inside the whole cherry, allowing the fruit’s natural sugars and flavors to infuse deeply into the bean.
