WHAT WE DO


SPECIALTY COFFEE

Specialty coffee is a term used to describe coffee that has been grown, harvested, and roasted to a high standard, resulting in a coffee that is of superior quality and has unique flavors and characteristics. The Specialty Coffee Association (SCA) has developed a grading system to rate coffee on a scale of 0-100, with scores of 80 or above indicating specialty quality. This system helps ensure that specialty coffee meets certain standards of excellence, including optimal growing conditions, meticulous harvesting and processing, and expert roasting techniques.

SINGLE ORIGIN

Single origin coffee comes from one specific place and has unique flavors and characteristics due to its distinct growing conditions. It offers a more complex and authentic coffee experience and often has a transparent supply chain.

DIRECT TRADE

Direct trade means buying coffee directly from farmers, bypassing middlemen. Benefits include high-quality and unique coffee, fair prices for farmers, sustainable and ethical sourcing, and a more personal coffee experience for consumers.

Aroma

The aroma of our coffee is a sensory delight, evocative of the bean's origin and roasting process. It is a complex and nuanced aroma, with notes of caramel, chocolate, fruit, and spice, all working in harmony to create a sensory experience that is both alluring and comforting. Body

Our coffee is harvested above 1200 meters above sea level (masl) in the region of Coatepec Veracruz it has a full and complex body. Due to the high altitude, coffee cherries mature more slowly, resulting in a denser and more flavorful bean with a higher sugar content. This translates into a heavier and richer mouthfeel, with a smooth and creamy texture that coats the palate.


Our beans are described as balanced, with a pleasant weight that complements the coffee's other sensory attributes such as acidity, sweetness, and flavor notes. The region's unique microclimate, with its mild temperatures, abundant rainfall, and fertile soil, contributes to the coffee's distinct body and flavor profile.

Taste
